Pan fried Potatoes with Stracchino and Rosemary

Fancy a twist to your usual pan fried potatoes?

INGREDIENTS:
- 600g potatoes
- 200g ViaVio Stracchino
- Kakariki Extra Virgin Olive Oil
- Fresh Rosemary
- Salt & Pepper
Peel the potatoes , cut them into slices, cubes or wedges and put them in cold water for a few minutes in order to remove excess starch.
Pour two or three tablespoons of olive oil in a large pan over medium-low heat and let it warm up.
Add the potatoes, Sprinkle with salt, pepper and rosemary, and cook them for a few minutes on a high heat while turning. Then lower the heat and continue cooking them by turning them every 3-5 minutes for about 20 minutes.
Once the potatoes reach your desired tenderness. Lower the heat to the minimum and add the ViaVio Stracchino in small pieces, cover with a lid and finish cooking for another 5 minutes until the stracchino is nice and melted .
