Creamy Pumpkin Soup with Strachino



Originally from north of Italy, the name Stracchino comes from the Lombard dialect “Strach” o “Stracco” meaning tired. It is said that this cheese was made with milk from tired cows. The cows over the summer season were moved up and down the Alps for pasture and returning tired this cows produced little milk. The milk of such cows gave the Stracchino its characteristic flavours.

Simple wintery soup with delicious Stracchino cheese


INGREDIENTS: serves 4

  • 1 kg Pumpkin

  • 200g ViaVio Stracchino

  • Chili flakes

  • Garlic

  • Salt

  • Pepper

  • Extra virgin olive oil



STEPS:

Pre heat 2 tbs of olive oil over low heat in a large saucepan.

Add the finely chopped garlic and stir for 30 seconds until lightly gold.

Add the pumpkin, peeled and chopped in big chunk, some chili flakes, salt, pepper and stir for 1 minute on high heat.

Add water up to top of the pumpkin chunks and turn heat to low, cover and simmer for 15/20 minutes until the pumpkin in tender. Allow to cool slightly. Blend for a smoother option.

Serve with Stracchino, a drizzle of extra virgin olive oil, fresh parsley and Buon appetito!
